  • 1x chocolate oatbran muffin.  Too much Splenda, I think.  I’ll get it right eventually… 🙂

Lunch

  • Skewered chicken
  • leftover grilled salmon
  • Mini babybel light

Afternoon snack

  • oatbran muffin
  • 100ml of low-fat yoghurt

Dinner

  • Small chicken breast, with quark mixed with a half teaspoon of red pesto and a half teaspoon of seeded mustard, all wrapped up in ham, as per Gentlemonkey’s serving suggestion.

Well, at least I’m not up again this morning on the scales.  Is it a turn around, or just a lull?

I’m trying my idea of going back to cycling into work, and then doing a 30 min walk in the evening, which means that I cycled for 25 mins or so, and walked for 30 mins, as opposed to walking for a total of 60.  I’m in the sometimes-bad habit of weighing myself just before bed, as I can usually predict where I’ll be the next morning for recorded weigh-in.  Well, I just weighed myself, and if usual patterns apply, I will probably not go down at all tomorrow, despite doing almost everything right today.  Even Babybel, as it turns out, is a “tolerated” food, so no transgression there.

Here’s hoping its all water weight, and so i just have to wait for the “whoosh”…

  1. Hey Charlotte,
A couple of questions about your scrummy chocolate muffins….
    How many do they make?
Do you know the cup/spoon measurements? or do you weigh out your ingredients??
    Thanks hon

    • Sorry, don’t know the cup/spoon measurements – I weigh all my ingredients. Oh, except the artificial spoon-for-spoon sweetener – I used 8 tablespoons of Splenda, but I reckon you could get away with less than that, cause they came out a bit sweet.

Depending on how big your muffin cups are, and how full you pour them, you’ll probably get 10-12 muffins out of this. I got 12 the first time round though they were not very tall, and then the second time around I filled the cups up to maybe a cm from the top, and got 10 and a tiny wee 11th one which I gobbled as soon as they were out of the oven. Yum!

60g of cocoa makes them VERY chocolatey. But there are all sorts of healthy things in pure cocoa, so I say go for it!
