Day 6 – Cruise PV

Morning weigh in: 97.9kg

Daily LOSS: 0.7kgs / 1.54lbs
Total loss: 1.9kgs / 4.18lbs

Watercheck 2.0l – diet coke, coffee, sugarfree cordial

Breakfast

  • 3 microwaved eggs
  • fat free yoghurt with rhubarb

Lunch

  • 1/4 chicken with cajun spices
  • side salad, no dressing

Afternoon snack

  • Stewed rhubarb with fat free natural yoghurt and sweetener

Dinner

  • Cauliflower rice with chicken, bacon & onion. Wow. Just… wow. Definitely Nom.
  • Stewed rhubarb with fat free natural yoghurt and sweetener

Exercise

  • 15 mins brisk walking around town for groceries
  • 30 mins gentle walking

OK, so the cauliflower rice recipe inspired by Pearly was awesome. I put bacon in mine though, which, coupled with the soy sauce, made everything way too salty. Pearly’s recipe calls for 3 tablespoons – I only put in 2 teaspoons and it tasted a little too salty – for J at least.  He was uncertain, but came around eventually. Next time, I’ll be doing it with just chicken, but maybe add some other stirfry veggies in it like spring onion or broccoli. Aside from the saltiness (I’ll leave out the bacon next time, that was overkill!) this is my New Favorite Dish.  Have any others out there tried making this in bulk and freezing it? I’m a big fan of cooking in bulk – it helps with my natural laziness… 😉

Oh, also? Yay for being down .7kgs today! Of course, it’s a Saturday and I did sleep in, which always skews the results, but it’s nice to see a “97” there. I’m not sure I got enough exercise to justify staying there tomorrow morning (it’s normal for me to go up a bit on PV days, especially after a five-day attack) but I’ll be attending the roller derby practice tomorrow, and probably cycling out there. I suspect that I’ll not be skating tomorrow (as one of those new skaters who didn’t pass the minimums standards test this time round – not uncommon!) but the cycling should at least help. 🙂

    I’ve got a couple cauliflower dishes that I’m planning to try out this week (cauliflower poppers and Spanish cauliflower rice with beef), but this one might make it on the menu, too, if I have time to run out & buy more cauliflower… 🙂

    I have tried freezing the cauliflower rice before and it didn’t work so well. I cooked it before freezing it so you could try grating it squeezing out the liquid and then freezing it. I am day 3 of attack and have lost 1.1kg one more day if attack so then onto some veggies, yay!!

  4. good job on the loss Charlotte. I am definately trying the caulifower rice now! it does sound rather tasty 🙂 I have got so many recipes which are quick and easy and with a few simple modifications can be dukan friendly so hopefully will have some time to experiment and post some recipes this week.
